Beat the egg whites stiff in a bowl. Add, stirring with a wooden spoon, the sugar, the flour and the coconut flour.
Combine the egg yolk and vanilla. Delicately mix from bottom to top.
Then take a plastic bag with a hole on the bottom and fill it with the mixture.
Delicately squeeze the bag and form little balls on a baking sheet. Keep them spaced out from one another.
Bake in pre-heated oven at 160°C for 15 minutes until golden brown.
